May is coming to a quick end and the garden has provided many a great harvest already. It was a great year for Spinach since we were able to get it in the ground so early on. I am going to pull the last of the early plantings out today and ready that part of the garden for bush beans. Cucumbers have started to vine and will be climbing their diagonal trellis within the week. Zucchini is flowering, tomatoes are growing, banana peppers are almost ready for harvest and green peppers are full of flowers.

Radish Bonanza

Radishes are such a rewarding plant to grow. Easy to grow and quick to harvest. This year, with the unseasonably mild winter and early spring, our radish production is legendary. (okay, maybe I watched too many episodes of How I Met Your Mother) Since we can only consume so many radishes at a time in a salad or as a snack I've been searching for ways to preserve them. I came across two ideas and I am going to try them both out. The first will be Pickled Radishes. I have all of the ingredients handy so I'm going to get started on it right away. Here is the recipe for anyone who would like to give this a try: 2 dozen radishes 1 cup sugar 1 cup cider vinegar 1 tbls musard seed 1/2 tsp celery seed 2 tsp dill weed Bring all ingredients except radishes to a boil and then drop in radishes. Remove from heat and pour into canning jars or any jar with a lid. Place in the refrigerator and enjoy throughout the summer. You may also chose to can them but I have heard that they start to wither in appearance over time and while that does not change the taste, it may change the way someone else views them.
