Lottie's Georgia Blackberry Cobler

My neighbor showed up this evening with a fresh picking of blackberries.  What a welcomed surprise to have a delivery of delicious gigantic berries!  She gave me a recipe for Black Berry Cobler her mother used to make.  Her Mom was a share cropper in the deep south.  I've augmented the recipe slightly so that I could use a stone ground whole wheat flour.








1 c. sugar
7/8 c. stone ground whole wheat flour
1 c. 2 % lowfat organic milk
1/2 tsp salt
1 stick melted butter
2-4 cups fresh fruit (in this case fresh farm away black berries)

Heat oven to 350 degrees.
In a 9 x 13 x 2 baking dish spread melted butter.
In a medium sized bowl mix sugar, flour, salt until all ingredients are blended well.  Add milk and stir until mixed.
Pour batter over top of butter.  Shake pan slightly to even batter and add berries or other seasonal fresh fruit to the top.

Bake 35-45 minutes.  I opted for 43 minutes and the berries were absolutely perfect!!
